Food formulators are looking for ways to provide healthy products to consumers. Join the scientists from ADM to explore how small changes in food formulations can make a big impact on the nutrition panel. Particular emphasis will be given to formulating with fiber, protein, whole grains, and bean powders. Kati Ledbetter, Applications and Product Development Food Scientist, and Anna Stadler, RD, Sales Manager for ADM's Edible Bean Specialties, will present thought provoking concepts that will spark the imagination with possibilities. Brent Flickinger, Ph.D. Senior Manager, Nutritional Science at ADM will discuss the current environment for nutritional claims and messages. With a market introduction by Lynn Dornblaser, Director CPG Trend Insight for Mintel International Group. All speakers will be available for a Q&A session following the presentation.

Brent Flickinger Brent D. Flickinger, Ph.D., is Senior Manager, Nutritional Science for the Archer Daniels Midland Company in Decatur, IL. Brent's responsibilities include scientific and regulatory support for ADM's entire portfolio of food and dietary supplement ingredients. Dr. Flickinger received his doctoral degree in Nutritional Sciences from the University of Illinois at Urbana-Champaign and his bachelor's degree in Chemistry from Juniata College in Huntingdon, PA. His training has an emphasis in lipid chemistry, biochemistry and metabolism. He has published in the areas of metabolism of unique dietary fatty acids, cellular targeting of bioactive lipids and emerging research/innovations in dietary fats and oils. Dr. Flickinger also participates in numerous industry associations including the International Food Information Council where he is currently co-chair of Dietary Fats Committee, the International Life Sciences Institute - North America as chairman of Technical Committee on Dietary Lipids, and is past chair of the American Heart Association's Industry Nutrition Advisory Panel.

Lynn Dornblaser Lynn Dornblaser, Director, CPG Trend Insight, Mintel International
New product trends have been the focus of Lynn’s career for 25 years, giving her a unique perspective on the marketplace and new product development. She brought that expertise to Mintel in 1998 when the company opened its US offices. A trained journalist and experienced public speaker, Lynn has been quoted by major US news organizations, including The Wall Street Journal, USA Today, The New York Times, and CNN. Lynn’s experience analyzing new product trends means that you can usually find her in the aisles of a supermarket somewhere in the world. Mintel International is a global research company, with offices in London, Chicago, Sydney, and Shanghai.

Käti Ledbetter is an Application and Product Development Food Scientist in the Research Division of Archer Daniels Midland Company in Decatur, IL. Her responsibilities include ingredient and application research in support of ADM Corn Processing and the ADM/Matsutani joint venture, which produces the Fibersol line of soluble dietary fiber ingredients. Käti has her bachelor’s degree in Food Science and Nutrition from University of Missouri at Columbia and is in the process of completing her masters in Food Science through Kansas State University. She is a member of the Institute of Food Technologists and American Association of Candy Technologists.

AnnaAnna Stadler, RD, Sales Manager Edible Bean Specialties
Anna Stadler is a Registered Dietitian and Sales Manager of the Dehydrated Edible Bean Products in the Edible Bean Specialties Division, of ADM. Anna has her bachelors degree in human nutrition and dietetics from Southern Illinois University-Carbondale and completed her dietetic internship through the ARAMARK-Kansas City program. She enjoys answering companies' requests for a healthy ingredient with an edible bean ingredient full of fiber and protein. Anna is a member of the Academy of Nutrition and Dietetics and the Institute of Food Technologists.
