About the Speakers

By the time he was 18 years old, Gustavo Chávez was already apprenticed to some of the best Mexican chefs in the Los Angeles area, and was honing his craft in the kitchens of "El Torito. At 20 years of age, Gustavo had helped film two commercials and had become the youngest manager and head trainer of the chain, and was entrusted with the successful launching of several branch restaurants in California, Florida and Missouri. In 1996, Chávez The Wrap and Roll Grill in Miami which was the forerunner of the current wrap trend. With over 100 subsequent appearances, Gustavo Chávez has entertained as well as educated "Despierta America’s" more than 10 million television viewers about the richness of the Mexican culture and its cuisine. Chávez has become so popular with the show’s audience that he has earned the nickname of “El Chile Mayor,” or “The Biggest Chile.”  He later was invited to entertain millions of viewers on the world famous show “Sábado Gigante” for over one hour. He currently is Quality Assurance and Quality Control Director for Chesapeake Bay Gourmet, which produces highly acclaimed crab cakes, sold exclusively through QVC, the nation’s largest television shopping networks.


Sylvia Meléndez-Klinger, M.S., R.D., L.D., C.P.T, registered dietitian and certified personal trainer, is founder of Hispanic Food Communications, Hinsdale, IL., a food communications and culinary consulting company.  She brings an in-depth base foundation of culinary and cultural expertise and introduces new strategies to maximize exposure among an increasing health-conscious Hispanic population.  She addresses specific health issues important to the increasing Hispanic population. Klinger leverages the tasteful Latin cuisine and lifestyle of health –conscious Hispanics with the increasing health problems fast approaching this Hispanic population today.
She also is culinary consultant to food, beverage and pharmaceutical companies such as The Coca-Cola Company, Dannon, Hormel, Hormel, Ross Laboratories, AstraZeneca, Glaxo Smith Kline,  Weight Watchers International, and The Quaker Oats Company where she completed numerous culinary and communications projects.  Previously, she served as senior culinary development specialist and supervisor of consumer test kitchens at the Quaker Oats Company. 
She is a member of the American Dietetic Association and Latino Hispanic American Dietetic Association, as well as Dietitians in Business & Communications, and Food and Culinary Professionals Practice Groups. She is an active member of the Chicago and Illinois Dietetic Associations and a member of the Grain Foods Foundation Advisory Board and the GlaxoSmithKline Multicultural Council on Weight Control.
