Botulism, Clostridium botulinum

Botulism, caused by botulinum toxin from the bacterium Clostridium botulinum, is a rare but serious foodborne illness caused by improperly canned or poorly preserved food stored under anerobic conditions. Thermal inactivation of the spore is critical to canning.
