MANITOWAC, Wisc.—A reduced-sodium soy sauce flavor, from Red Arrow Products Company, offers food manufacturers additional flexibility in product formulation. Natural Soy Sauce Flavor RA10023 is the latest addition to Red Arrow’s Flavors from the Kitchen™ line. The flavor is designed to allow soy sauce users to replace up to 50% of the soy sauce in their formulation with Natural Soy Sauce Flavor RA10023 at 10% of the removed amount. For instance, if a dish includes 10% soy sauce, product formulators could remove 5% soy sauce (50% of the total) and replace it with 0.5% flavor and experience minimal to no loss in soy sauce flavor. This reduction in application rates provides additional benefits including sodium reduction and potential cost-savings.

There is minimal sodium contribution from the flavor. Thus, Natural Soy Sauce Flavor RA10023 allows processors to reduce the sodium contribution made by the soy sauce portion of their formula by up to 50%, all while providing an authentic flavor profile.

Studies show that when Natural Soy Sauce Flavor RA10023 is used to replace spray-dried soy sauce in formulations, it can result in cost-in-use savings of up to 25%, in certain cases.
