Beverage Flavors—Continue to see flavors centered around new "fantasy" combinations - blends that intrigue the senses. Floral and fruit combinations will hit more mainstream products, as will classic sweet flavors like honey and fresh sweet mint.
Culinary Infusions—Trendy flavors in savory markets include gourmet and artisan varieties of mustard flavors, black garlic and other specific varieties of herbs and spices, cooked or roasted fruits such as burnt orange, savory meat flavors that evoke the taste of expertly prepared meats, as well as "old world" flavor types in new formats such as soups and sauces.
Healthful Formulations—As more and more marketers look to create healthful products in 2010, the need for taste modification technologies for new sweetening systems, notably stevia, salt reduction, and vitamin and mineral fortification, will remain a critical factor in gaining success with new products.
