BALTIMORE—While the vegan diet is not something new, it seems to be experiencing a rebirth as more consumers opt for locally grown products such as fruits, vegetables, nuts, grains and soy products. A recent article in the Baltimore Sun examined the growth of vegan cuisine and its entry into the gourmet and mainstream market.
Vegan gourmet is in with a host of cookbooks and Web sites offering tasty concoctions. Top vegan celebrities and high-profile foodies also are providing exposure to the diet completely free of animal products, and restaurants, grocery stores and bakeries are adding more vegan options.
