The spicy flavoring that originated in Buffalo, N.Y., years ago is stampeding onto restaurant menus and new product introductions nationwide as consumer demand for the flavorful and low-fat kick in the taste buds is increasing.

According to a recent USA Today article, 47 new products with the term "Buffalo" in their names showed up in the nation's supermarkets in 2008, and 28 more hit the shelves this year through mid-September. Analysts say the recent “buffalo stampede” can be attributed to the fact that aging palates want spicier foods, and the hot-pepper flavoring is relatively nutritious because it’s low in fat, sodium and calories.
