Preserving Cocoa’s Antioxidant Level

HERSHEY, Pa.—Little has been known about the effects of common cooking processes on cocoa flavanols; however, new research on the antioxidant activity and polyphenol content of cocoa powder provides insight into levels of these beneficial compounds in chocolate frosting, hot cocoa drinks, chocolate cookies and chocolate cakes made with natural cocoa powder.
