Pulse Foods Becoming Mainstream

GRAND FORKS, N.D.—Dry peas, lentils, chickpeas, lupins and fava beans are all protein- and fiber-rich pulses—a food staple in many countries with meatless diets—that are gaining mainstream popularity due to health appeal and nutritional aspects.

In addition to improving the fiber and protein profile of foods, pulses provide a natural source of folate and zinc. While their non-GMO, gluten-free and non-allergen status has niche market appeal, the mainstream U.S. food industry is beginning to exploit the “green” marketability of such products.

“Food processors are looking for natural additives that will appeal to a more health-conscious consumer worried about the growing epidemics of heart disease, obesity and diabetes,” said Kaye Effertz, Northern Pulse Growers Association marketing director.
