LONDON and CHICAGO—While the current state of global recession is slowing the growth of the organic food segment, consumers are still willing to pay a little extra for “green” products.

As reported by Reuters, the global market for organic food and beverages was worth $22.75 billion in 2007, and with economies in crisis, the trend is slowing in the United States, Britain, France and Germany.
