Leatherhead Sought To Improve Hydrocolloids

LONDON—Leatherhead Food International sought to improve the performance of hydrocolloids in a three-year study using physical processing, NutraIngredients reported. The project examined the properties of gelling agents and  whether they could be improved by manipulating polysaccharide molecular weight by acidic hydrolysis.
