STANFORD, Calif.─ Brewers may be able to better control the brewing process now that researchers have identified the genomic origins of the lager yeast Saccharomyces pastorianus, according to a study published September 11 in Genome Research.
The research suggests that “unique genomic structures may be characteristic to each brewery and/or beer type,” which “could lead to insights on how to directly control flavor and aroma in beer,” said study researcher Dr. Barbara Dunn.
