Researchers at Tufts University have been investigating application possibilities for a range of “living” optical elements that integrate nanotechnology. Some concepts under consideration include an edible optical sensor for bagged produce, such as spinach, that can detect harmful levels of bacteria. In addition to food product applications, the devices have potential use in human and livestock health, as well as environmental monitoring.

The Tufts researchers used silkworm fibers to develop the devices and are actively exploring commercialization opportunities.
