Ever notice how many recalls these days are related to undeclared allergens or cross-contamination? Just peruse the FAAN recall alerts page or the USDA-FSIS listings to get an idea. It’s a regular occurrence—and a major headache for manufacturers.

Prevention is the key here, and a solid allergen-containment program is a must for plant protocol. On Tuesday Oct. 11 at 1:00 PM during SupplySide West, Amaral Sequeira-Munoz, Ph.D., from ASI Food Safety Consultants, will dig into this very issue in her presentation, “Food Allergens and their Control in the Food Manufacturing Industry” (see the food and beverage education track listings for more details).
