Until recently, manufacturers of salad dressings had few options when it came to choosing an emulsifier for their formulations. And the industry standard, propylene glycol alginate (PGA), was expensive and in short supply. Now, TIC Pretested® Saladizer® Max from TIC Gums, Inc., provides an alternative, lower-cost gum system developed specifically for use in salad dressings and marinades.
Derived from gum acacia, Saladizer Max serves as a 1:1 replacement for PGA, offering comparable emulsion stability, viscosity and sensory attributes, and making reformulation unnecessary. It prevents oil separation, provides creamy texture, emulsifies at low concentrations and is stable in harsh environments, such as high-acid, high-salt and high-temperature.
Over the course of two years, Saladizer Max was extensively researched and tested in both full-fat and low-fat salad dressings, including a two-year shelf-life study and several laboratory and commercial evaluations, where it was compared to dressings made with PGA.
“No differences were found in viscosity, emulsion stability or shaker-table stability,” says Maureen Akins, lead food scientist. “Microscopy indicated an improvement in oil-droplet size (smaller particles) using the Saladizer Max, and sensory evaluations revealed that no statistically significant differences could be found between control and trial samples.”
Saladizer Max is agglomerated using TIC Gums’ Pre-Hydrated® process, so it disperses easily without lumping—even with minimal agitation—and hydrates rapidly in cold water, shortening the process time of the finished product. Further, it eliminates the need for slurries and premixes; handles with virtually no dust; stabilizes emulsions; suspends spices; and improves mouthfeel and cling of dressings and sauces. Usage levels range from 0.05% to 0.25%.
“Any type of sauce, soup or marinade that requires emulsification is suitable for this technology,” Akins says, “or anywhere someone is trying to replace PGA.”
